Arugula, Pear and Blue Cheese Salad with Lemon and Thyme Vinaigrette
Lemon and Thyme Vinaigrette:
2T Red Wine Vinegar
2T Lemon Juice
3 Sprigs Fresh Thyme, stripped
1t Minced Shallot
¼ C Unfiltered Extra Virgin Olive Oil
Salt and Cracked Pepper to taste
For each salad:
1 Handful of Arugula
Amish Blue Cheese Crumbles
½ D’Anjou Pear, sliced and fanned
For the Vinaigrette- Add all of the ingredients into a jar, secure the lid and shake it up.
Assemble the salads, waiting until the last minute to cut the pears and drizzle vinaigrette on top.
Not everybody loves bitter and peppery Arugula. If you're in that camp, just use a salad green you like. Not a fan of Blue Cheese? Sub Goat Cheese or Parmesan.
